Making a better chocolate chip cookie?

I made cookies for treat day at work on Friday. it was a modified chocolate cookie recipe. I added unsweetened cocoa (1/3rd cup) and about a tablespoon of cinnamon. And instead of just one kind of chocolate chip, I mixed up a mixture of:


  • Hershey's Cinnamon Chips

  • Hershey's Special Dark Chips

  • Ghirardelli Classic White Chips

  • Ghirardelli Milk Chocolate Chips

  • Ghirardelli Semi-Sweet Chocolate Chips

  • Ghirardelli 60% Cacao Bittersweet Chocolate Chips

I can't remember, but I think I added only half of the chips that I was supposed to (I doubled the recipe but not the chips)....I'm actually pretty sure I only put in half the amount of chips I was supposed to.

The reviews were pretty good, however I had a few complaints.


  1. The cookies were especially good, right out of the oven (or almost right out of), but as they cooled and got harder, they weren't as good. The cinnamon taste wasn't as prominent as they were fresh out of the oven

  2. The cookies didn't raise much at all...now if this is because I messed up the recipe or they just weren't supposed to, it's something I want to fix.

  3. I would like to get the size of the cookies to be more consistent (even though I was using a tablespoon, I didn't really make sure that it was really of a consistent volume

  4. Though initially soft and crispy at the same time, as time passed (just 15 hours), they got to a point where they were more hard then soft (probably due to them not rising at all)

  5. Can I replace the walnuts, that the recipe calls for, with chips? So 3 cups of chips instead of 2 cups of chips and 1 cup of walnuts (I didn't put the walnuts in the recipe (Shannon doesn't like them))?

I have quite a big bag of chips left, so I can try again...but I think I may search for another recipe...or at least a way to update this one to fix the problems that I want to fix...

This has got to be the fastest that probably 6-8 dozen cookies went (recipe says it makes 4 dozen). Since none are left (1/3rd went to my work, 1/3rd went to Shannon's and 1/3rd at home and movie night (mostly movie night) and the last of that to Chris and Holly's new place).

Maybe I'll make more cookies this week...or next...
