2017 - Week 22 Cooking Results

White Park Beef Burgers

That's some pretty good beef, right there.  Salt, little bit of fat in the pan (not sure of the fat content of the beef) and went from there.  Good stuffs.

2017 - Week 22 Cooking

So back here in reality world, we  may have overspent quite a bit this past weekend, so we'll have to play from the freezer and whats on hand.  Since I, however, have a good selection of things to choose from, it shouldn't be to hard to keep it under a reasonableish amount.  We're going to a soft opening at the Cheese Bar on Tuesday.

2017 - Week 21 Cooking Results

Mutton chops & potatoes and chive blossoms

Roasted the mutton chops in duck fat, used duck fat in the mashed potatoes...however the chive blossoms were past their prime, so I chopped up a few chives.  Quite, quite good.

Chicken Breasts over salad with chive blossoms

This was the tail end of the chive blossom goodness, but still quite good.  Simple and easy to put together.

Goat Burgers

Goat!  it's what's for dinner.  Served with some quark.

Grilled Cheese with Lady Edison

Lady Edison is a country ham, and a new(ish) edition to the cheese shop.  Good stuffs, good grilled cheese.

2017 - Week 21 Cooking

Short week ahead, due to a wedding and memorial day weekend.  I'm looking forward to a couple of days off, though missing a farmer's market is less then desirable (I am a man who likes his routine).

2017 - Week 20 Cooking Results

Exciting week with storms ripping through the metro and causing problems.  I actually called the cops to do a welfare check on the lady that lives behind me, because half a fairly large tree fell on her house.  When the cops showed up, the rain had stopped, I had arrived at home and I walked back as well.  It appears as if the lightning struck and split one of the trees in her yard.  She was clearly shaken by the experience.  We were without power for a few hours.

Ricotta Scrambled Eggs and buttered Ramps on Toast

So anytime you combine butter and eggs, you have a good start, then you add ramps?  om nom nom nom.

Ground Goat burgers

Lamb was at the store, bought lamb, made lamb burgers instead.

Chicken and Green Bean Stir Fry

Didn't feel like stir fry, made sandwiches instead.

Roast Chicken Tacos w/ Radishes

This turned into ground chicken and leftover ground beef.  Easy and good.  Also turned into a salad (which Shannon prefers over tacos).

Spicy Carrot Sandwiches

So this is where my general disappointment comes in.  I love this sandwich, I had planned to have this sandwich earlier in the week, but when I stopped to get bread, I went with what was convenient.  It's been a while since I bought South Union bread, and frankly there's several reasons why.   The main one being that the quality has dropped down into the not worth buying category.  But the hours open, and on the way home.  The loaf of "sour dough" was terrible...not sour, not even remotely what on would expect out of a loaf of quality bread.  So disappointing.

After picking up a loaf from La Mie (they close to early for an after work pickup), I was able to make this to my level of expectation.

2017 - Week 19 Cooking Results

White Park Steak (Lucky George) with Asparagus with Crumbled Bacon (or seared Prosciutto) and Balsamic Vinegar (or not)

Remember, Shannon doesn't particularly like steak, even strip steak.  Certainly a nice buttery flavor of the steak, clearly Lucky George is trying to find the right breed for their farm.  I liked how the roasted asparagus turned out as well.  I ended up just using crumbled bacon.

Roasted Green Garlic pesto w/ toast and and egg on it (stealing from Brett right here)

Salt + green garlic tossed in olive oil, roasted, then pureed with olive oil.  Then I took a side path, and decided to make burgers instead.  Pretzel buns + 15 Fields Irish Cheddar + bacon + hamburger fried in bacon fat + Green Garlic Pesto.  Good stuffs.  That turned out great.  Admittedly I was thinking about it for a good chunk of the day.

Ramp & Sausage Risotto

Ramps!  Yay!  I made extra so Shannon could have risotto leftovers, cause I almost never make risotto anymore.

Quinoa Pilaf with Scallions and Saucisson Sec (reference)

I made it to spicy.  I used jalepeno pepper powder, and just added to much.  My apologies to my wife.  That being said, I'm enoying the leftovers.  I like how filling Quinoa is.

2017 - Week 19 Cooking

So I thought about writing something before the first farmers market of the season, because I do have mixed emotions about it.  I want to see all the people that I see.  I like the ritual of it.  But things have changed and I have to accept that.  Larry has retired from the market (semi-forcibly, FU Iowa DOT), Lois changed her focus (completely understandable, but still going to miss her and her cheese).  As part of the ritual of it, the parking garage I normally would park, is boarded up, changing my path through the market.  I still enjoyed it, but it indicates a clear change.  On the positive side, Jordan at Grade A has seemed to take over the ideas and spot from his mentor Larry.  Brett (Cheese Bar / Cheese Shop) was down there making some delicious samples to give people ideas of what to do the products.

I picked up 3 types of basil from Wabi Sabi (lemon, sacred and Italian) and planted them in the side yard and watered them.  We'll see if I can keep them alive (I don't have a good record with basil).

So I'm going to be a bit excessive this week in celebration of DTFM finds and the opening of the market.

2017 - Week 18 Cooking Results

Skillet Tamale Pie

Used the rest of the beef from the CostCo package.  Comes together pretty well, a bit of effort.

Hamburgers

Used some grass fed beef.  I like heritage + grass fed.  But that may just me being picky.  This was mass market from CostCo, it was fine...

Bratwursts

Ham Steak with Duck Fast Mashed Potatoes

I like duck fat...yes I do.  I like it on things and in things and this was good.  Also added parmigiano reggiano.  Good Stuffs.
