Making more consistant, better cookies

So I was listening to the Splendid Table Podcast. And she was interviewing Dorie Greenspan about cookies and one of the biggest points, that I do by accident, and makes a lot of sense, is to let the cookie sheets cool before you reuse them. So, when I make my cookies, the cool for 4 minutes on the stove, and then they cool by the wire cooling racks before I reload them again.

It makes sense that it would affect the cookie, since if the sheet is hot (or even warm), it would start melting/cooking the cookie batter.

I'm also glad that it's has the full show on the podcast now, rather then just the questions, cause I enjoy listening to the show, but I often don't have time to listen when it's on the air on our local NPR station.
