So this week was a bit odd. And by odd, I mean it's nice to have options again. So after having to delay a reservation then cancel (Shannon was sick, caught the cold that I had), we finally made to to Le Jardin. It was nice to see Tag back in form especially with the fond memories that I have from his previous place. It was a very good meal, I especially loved the rabbit meatloaf (yes really). It was stunningly good.
So now that we've crossed this must visit off the list, we need to start to run the circuit of places we need to visit and new places and etc. Which is, thanks to Shannon's student loans being paid off now, much easier to (in fact possible) to do. Proof is next in my mind, but I'll have to check with the wife.
Because, once again, I didn't read through the whole recipe, the baked beans weren't ready when we were ready to eat them, luckily, Gusto was having a special highlighting the Younkers Rarebit on the pizza, so we got that instead, it was pretty good.
Sear Roasted Salmon Fillets with Lemon Ginger Butter
So this turned into a sandwich, I just wasn't feeling the effort that day. I will make this sometime, since I do have this package of salmon from CostCo (Checked the seafood watch app). The sandwiches were good.
Ricotta Omelets
See due to the nice gift from Des Moines HR thanking me for the efforts I've done on their behalf, I replaced my no longer non-stick pans with some new ones. and was actually able to make an Omelette, however, I was out of practice, so they weren't super pretty, but at least I could do it without totally fighting the pan. I didn't make the tomato sauce that this recipe asked for a topper, but even so, this was pretty good.
Spicy Red Eye Baked Beans
So I knew I had to soak these beans before cooking them, I read that far, but what I didn't realize that It wanted to cool down, sit another night, to be reduced the next day. So from a 2 day adventure to a 3 day adventure. That being said, they were really good. Like way better than any canned baked beans (even the fancy kind) that I've ever had. So I didn't follow the recipe fully, especially around the spices (I didn't have quite the mix they asked for, but added similar items and maybe a bit more). I also added an end of the La Quercia bacon. Since the slices for the lamb burgers almost finished out the unsliced slab, I took that last edge piece as well to add in to the flavor. So a big old Smoked (ish, I think this is from the old processor, thus smoked injected, not actually smoked) hock from Crooked Gap, and a bacon end. Boom! Deliciousness ensued. How do I know it's good? Shannon's having a bowl of beans for lunch. Ok maybe that's due to the fact there is not a ton of stuff in the house to eat, but it could be that they are good.
Lamb Burgers
Lamby lamby lamb lamb. Nom nom nom. I used Challerhocker to pair with the lamb, per an excellent suggestion of Brett at the Cheese Shop and a couple of slices of La Quercia Bacon (they call it smoked pancetta). So good. Love me some lamb.
