2012 - Week 13 Cooking Results

Philly Cheese Steaks (p15 Cook's Illustrated March / April 2012) (replacing the american cheese)

So, we had this on Sunday night, the next day I get the weekly deals email from Gateway, and after the guys behind the meat counter at Hy-Vee telling me they couldn't get skirt steak (which made me raise my eyebrows a bit), Gateway had it, on sale.  I used flank steak instead (which was fine), but it kind ticks me off a bit.  Anyways, replacing skirt with flank, it worked out well and I actually followed the method that was more like the chopped steak recipe from a couple of weeks back.  I used some small farm cheese (that I am forgetting the name of) from The Cheese Shop, and it turned out pretty well.

Spanish Chicken Cutlets with Yogurt Sauce (RC Cook's Country February / March 2012)

This was actually really good.  The method of spicing the yogurt, using that to adhere the breadcrumbs, this turned out pretty well.  I could see this for other methods, (chipotle for example).  Though I did get interrupted in the middle of the meal by some fine people who wanted me to become more active.

This was...ok...it is just not up to what I expect from Cook's Illustrated.  For the time it took, it was ok...I've made a lot better things with less time.  Oh well, it wasn't bad, I was just hoping for more.

Pork Burgers

So it ended up being a mixture of very good pork and ok beef.  I had to use some of the pork for the meatballs, so that's why I had to do a bit of a mixture.

Tuna Noodle Casserole (p18 Cook's Country February / March 2012)

So when I tasted this, before it went into the oven,  I was thinking that this needs a bit more.  So to get that done, I remembered I had 3/4ths of jar of the Salsa de Mesa from Juan O'Sullivan's.  So I added most of what was left and then added the mixture to the pan for baking.  It turned out very good.  I certainly said, don't want to speak for my wife here, that it tasted like what I remember from my childhood...but better (sorry mom).  The Juan's added a bit, but not to much to the background.  It was good, I think I may make it again...perhaps for delivery.
